HEALTHY Crispy Chicken Caesar salad


This recipe will be your go to salad for when you are wanting something high in protein and that'll suit your goals, whilst making your feel like you've had that yummy creamy salad that everyone loves!



Tip with this one is pick a base leaf (I chose iceberg lettuce and spinach) and then 2 veggies (here is shredded carrots and cucumber). These are high volume foods that will keep the calories low but fill you up!







INGREDIENTS


For the chicken

100g chicken

30g oats

1tbsp flour

1 egg

Salt

Pepper

Chilli Powder


For the base

80g lettuce leaves (spinach and iceberg combined)

40g carrots

2 mini cucumbers

Optional: Turkey bacon (60cals, 0.5g carbs, 4.7g protein, 4.5g fat)


For the dressing

2tbsp 0% greek yogurt

1tbsp lighter than light mayo

garlic

black pepper

salt

lemon juice



METHOD:

  1. Prep 3 bowls with 1. flour and spices 2. oats, 3. egg. Chop the chicken into slices and dip each into flour then egg then oats!

  2. Air fryer at 200 for 15-20 minutes or cook in the oven for 25-30 minutes.

  3. Whilst the chicken is cooking prep the base. Chop the veg and put into a bowl

  4. In a separate bowl prep the dressing. Mix well and then pour on top of the salad base.

  5. (TIP: Put the base salad into a Tupperware and the salad dressing on top and shake the box so its all covered!)

  6. Place the cooked chicken on top of the base and enjoy!
